Directions
- Put a butter in a saucepan and fry chopped onion for about 1 minute, then add the root vegetable and also fry for 1 minute.
- Then add broccoli, brussels sprouts, cauliflower and fry only slightly - for about 1 minute. Be careful, do not break vegetables.
- Then pour water as much as you want soup, we recommend about 2.5 to 3 liters of water (depending on how thick you want it and do not forget that you still add potatoes and mushrooms).
- Add chopped potatoes and a few small onions, marjoram, bay leaf, pepper, ground cumin, allspice, bouillon cube, homemade dried vegetable and mushrooms. (If using dried mushrooms, it is good to leave them pre-soak at least 1/2 hour)
- Stir everything and cook with the lid on until potatoes and mushrooms are soft.
- When everything is soft, season to taste, most often we only add 1/2 teaspoon marjoram and pour some water.
- You can thicken the soup with about 2 tablespoons of flour mixed in 100 ml of water or with about 3 tablespoons or grated older bread. Whether you choose one or the other, apply a thickening ingredient while stirring. Add the garlic and a little chopped parsley or chives.
- Simmer at low heat for about 5 minutes and it is done.
